<p>Die Beerensaison neigt sich dem Ende zu: Höchste Zeit für einen letzten Stachelbeer-Streuselkuchen vom Blech! Mit flauschigem Hefeteig, sauren Stachelbeeren und natürlich knusprigen Streuseln. <p>Stachelbeeren habe ich ziemlich lange ziemlich wenig Beachtung geschenkt. Vermutlich, weil ich sie nicht gerne roh esse. Zu Kuchen verbacken bilden die sauren Beeren aber ein herrliches Gegengewicht zum süßen Teig: Stachelbeerkuchen schmeckt einfach nach Sommer pur!</p>

<p>Und ich weiß nicht, wie es euch geht, aber mich gelüstet es im Sommer immer nach einfachen Blechkuchen mit viel Obst. Simpel, schnell und so lecker! Am besten natürlich mit reichlich knusprigen Streuseln belegt. Der Hefeteig in diesem Rezept ist relativ weich. Lasst euch davon nicht abschrecken, denn er ist dadurch zwar etwas schwieriger zu verarbeiten, wird aber dafür aber nach dem Backen extra flauschig.</p>

Die Butter in Stücken hinzugeben, alles zügig mit den Händen verkneten und zu groben Streusel zerreiben. Die Hefe in der lauwarmen Milch auflösen, 1 EL Zucker unterrühren und alles in die Mehlmulde gießen. Die Hefemilch mit etwas Mehl verrühren, die Schüssel mit einem Küchentuch abdecken und den Vorteig 10 Minuten gehen lassen.</span></div></li><li id="wprm-recipe-13669-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Den restlichen Zucker, die Vanille, das Salz und die Eier hinzugeben und den Teig bei niedriger Geschwindigkeit 10 Minuten lang in der Küchenmaschine kneten. Dann die weiche Butter hinzugeben und bei mittlerer Geschwindigkeit nochmal 10-15 Minuten kneten, bis sich der Teig vom Schüsselrand löst.</span></div></li><li id="wprm-recipe-13669-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Die Teigschüssel wieder mit einem Küchenhandtuch abdecken und den Teig an einem warmen Ort 1 Stunde gehen lassen, bis sich sein Volumen verdoppelt hat.</span></div></li><li id="wprm-recipe-13669-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">In der Zwischenzeit die Stachelbeeren waschen und die Stiele entfernen. </span></div></li><li id="wprm-recipe-13669-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Den gegangenen Teig nochmals kurz durchkneten, gleichmäßig dünn ausrollen und auf ein gefettetes oder mit Backpapier ausgelegtes Backblech legen. Die vorbereiteten Stachelbeeren eng hintereinander auf dem Teig anordnen. <p>Okay, pur sind mir Stachelbeeren immer noch zu sauer und irgendwie auch zu pelzig. Aber wie gut passt diese saure Note in ein süßes Teigumfeld! In diesem Fall gebettet in eine feine Marzipan-Vanille-Creme, die auch nach dem Backen noch herrlich cremig bleibt und flauschigsten Hefeteig. So schmeckt Sommerglück!</p>

Die Vanille mit der Milch in einen Topf geben und aufkochen. Die heiße Milch unter ständigem Rühren zu der Eigelbmischung gießen und alles gut vermischen. Die Masse zurück in den Topf geben und bei mittlerer Temperatur unter ständigem Rühren erwärmen, bis die Masse eindickt. Die Creme in eine saubere Schüssel füllen und mit der Butter verrühren. Direkt an der Oberfläche mit Frischhaltefolie abdecken, damit sich keine Haut bildet und vollständig abkühlen lassen.</span></div></li><li id="wprm-recipe-8267-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Für den Teig die Butter in einen Topf geben und zerlassen. Vom Herd nehmen und die Milch hinzugeben. Hefe in eine Schüssel bröckeln. Mit der lauwarmen (!) Flüssigkeit übergießen und rühren, bis sich die Hefe aufgelöst hat. Zucker, Salz und das Mehl dazugeben.
