<p>Einige von euch kennen dieses Brötchen-Rezept vielleicht bereits aus meinem <a href="http://eepurl.com/hoyDk5" target="_blank" rel="noreferrer noopener">Newsletter</a>. Es gehört zu meinem festen Repertoire, das ich sehr regelmäßig backe, weil es so unglaublich einfach und schnell geht und dabei so köstlich schmeckt. Mit maximal 15 Minuten Arbeitsaufwand und gerade mal vier Zutaten bekommt ihr knusprige Frühstücksbrötchen wie frisch vom Bäcker.</p>

<p>Der Teig kann einfach über Nacht im Kühlschrank gehen und dann erst am nächsten Morgen eine Stunde vorm Frühstück zu Brötchen verarbeitet werden. Ihr könnt dafür ein ganz gewöhnliches Backblech verwenden oder aber ein  <a href="https://tidd.ly/41KlPZ1" target="_blank" rel="noreferrer noopener sponsored nofollow">Baguette-Blech</a>* <em>(Werbelink)</em>, damit die Brötchen noch besser ihre Form behalten. Ich habe ein normales, flaches  <a href="https://tidd.ly/48ywnwu" target="_blank" rel="noreferrer noopener sponsored nofollow">perforiertes Backblech</a>* <em>(Werbelink)</em> verwendet, damit die Brötchen extra knusprig werden.</p>

Verrühren, bis sie sich aufgelöst hat und dann das Mehl und das Salz hinzugeben. Dabei zu Beginn eine kleine Tasse Wasser auf den heißen Ofenboden gießen, um Dampf zu erzeugen (Tür sofort schließen). Nach 15 Minuten die Ofentür kurz öffnen, damit der Dampf entweicht und die Brötchen schön knusprig werden. <p>Das Rezept ist nicht besonders kompliziert, aber vielleicht auch nicht für absolute Backanfänger/innen geeignet. Ein bisschen Erfahrung mit Brotbacken und Sauerteig kann jedenfalls nicht schaden. Wundert euch nicht, wenn der Teig auch nach dem Kneten ziemlich weich und leicht klebrig bleibt und gebt nicht immer mehr Mehl dazu, denn sonst wird das Brot am Ende zu trocken. </p>

<p>Trotz der weichen Konsistenz lässt sich der Teig nach den Gehzeiten auf der bemehlten Arbeitsfläche gut zu einem straffen Brotlaib formen. Wenn ihr nicht das komplette Brot auf einmal essen möchtet, könnt ihr es auch wunderbar scheibenweise einfrieren. Durch den Sauerteig hat auch das fertige Brot hinterher einen leicht säuerlichen Geschmack, den es von herkömmlichen Buttertoast mit Hefe unterscheidet.</p>

<p>Ich persönlich mag diese säuerliche Nuance sehr gerne. Besonders für mein Lieblingsrezept, Grilled Cheese Sandwich: Dafür einfach ein Scheibe Toastbrot mit ordentlich Bergkäse belegen, ein paar Zwiebelringe in etwas Zucker karamellisierten, ein paar Gewürzgurken längs in Scheiben schneiden und beides ebenfalls auf das Brot legen. Eine zweite Scheibe Brot wie ein Sandwich darauf legen und dann von beiden Seiten mit etwas Butter in einer Pfanne (oder einem Sandwichmaker) braten, bis der Käse geschmolzen ist – LECKER! Ich wünsche euch ganz viel Spaß beim Nachbacken!</p>

Den Vorteig dazugeben und etwas unterrühren. Nach und nach das Mehl hinzugeben und 20-25 Minuten auf zweiter Stufe kneten, bis ein elastischer Teig entstanden ist, der sich von den Schüsselwänden löst (er bleibt relativ weich und leicht klebrig). Den Teig luftdicht abdecken und über Nacht bei Zimmertemperatur gehen lassen.</span></div></li><li id="wprm-recipe-8920-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Am nächsten Tag den aufgegangenen Teig einboxen, damit die Luft entweicht und nochmals kurz durchkneten. Den Teig auf eine leicht bemehlte Oberfläche geben und zu einem Rechteck formen. Anschließend die Längsseiten übereinander klappen, d.h. wie einen Brief falten und erneut 10 Minuten gehen lassen.</span></div></li><li id="wprm-recipe-8920-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Den Teig von der kurzen Seite her eng aufrollen, sodass eine längliche Rolle entsteht. Die Teigrolle mit der Naht nach unten in eine Kastenform legen und luftdicht abgedeckt (bspw. in einer verschlossenen Plastiktüte) ein letztes Mal 2-3 Stunden bei Zimmertemperatur gehen lassen, bis sich das Teigvolumen verdoppelt hat.</span></div></li><li id="wprm-recipe-8920-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Den Backofen auf 190°C Ober- und Unterhitze vorheizen.</span></div></li><li id="wprm-recipe-8920-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Das Toastbrot auf der mittleren Schiene im vorgeheizten Ofen 20 Minuten backen, dann die Form umdrehen und nochmal 20 Minuten fertig backen. Das noch warme Brot in der Form mit Butter einstreichen. Aber eines Tages habe ich es einfach mal ausprobiert und was soll ich sagen? Das Ergebnis war auf Anhieb so gut, dass das Rezept direkt auf dem Blog gelandet ist – und zwar ganz ohne Laugenkrimi.</p>

<p>Als Basis habe ich einfach den Teig für meinen liebsten <a href="https://lacrema-patisserie.com/hefezopf" target="_blank" rel="noreferrer noopener">Hefezopf</a> in eine salzige Variante umgewandelt und die Brezeln vor dem Backen in eine Lauge aus Wasser und normalem Backnatron getaucht. Das Ergebnis sind wunderbar knusprige Brezeln mit einer flauschigen Krume und dem typischen Laugenaroma. Und das Beste: ihr müsst beim Backen weder Schutzkleidung anziehen, noch Angst um eure Hände oder sonstige Körperteile haben! <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f609.png" alt="😉" class="wp-smiley" style="height: 1em; max-height: 1em;" /> </p>

<p>Falls ihr mein Hefezopfrezept noch nicht kennt, lasst euch nicht abschrecken: es ist relativ (zeit)aufwendig und erfordert etwas Vorbereitung, da es mit sehr wenig Hefe auskommt. Aber der Aufwand lohnt sich! Ihr werdet mit einem tollen Geschmack und einem perfekten Teig belohnt, der sich super verarbeiten lässt. Und mit einem guten Zeitmanagement ist das Ganze auch gar nicht so kompliziert. Wichtig ist, dass die Zutaten die richtige Temperatur haben und die Milchprodukte daher rechtzeitig vor der Verarbeitung (am besten am Vorabend) aus dem Kühlschrank genommen werden. </p>

<p>Je schneller ihr die Brezeln nach dem Laugenbad in den Ofen schiebt, desto schöner wird hinterher ihre Farbe und Oberfläche. Am allerbesten schmecken sie direkt nach dem Backen, aber ihr könnt die Brezeln auch luftdicht aufbewahren und dann am nächsten Tag nochmal etwas befeuchten und erneut aufbacken – so schmecken sie wieder wie frisch aus dem Ofen. Anschließend beides zusammen mit allen übrigen Zutaten außer der Butter in eine Schüssel geben und in der Küchenmaschine 10 Minuten auf niedriger Stufe verkneten. Dann die weiche Butter dazugeben und nochmals für 5-10 Minuten unterkneten, bis ein geschmeidiger Teig entstanden ist, der nicht mehr an der Schüssel klebt. Den Teig abdecken und nochmals 1 Stunde gehen lassen.</span></div></li><li id="wprm-recipe-9121-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Den Teig in acht Stücke teilen, zu länglichen Kugeln formen und 10 Minuten entspannen lassen. Anschließend zu langen Strängen rollen, die an den Enden dünner werden und zu Brezeln formen. Die Brezeln auf zwei mit Backpapier belegte Backbleche legen und abgedeckt nochmals 30-45 Minuten gehen lassen.</span></div></li><li id="wprm-recipe-9121-step-1-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Den Backofen auf 220°C Ober- und Unterhitze vorheizen.</span></div></li><li id="wprm-recipe-9121-step-1-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Für die Lauge das Wasser zum Kochen bringen, den Natron hineingeben und den Herd ausschalten. Die Brezeln mit einer Schaumkelle nacheinander vorsichtig in den Topf geben und 30 Sekunden in der siedenden Lauge ziehen lassen (sie sollten vollständig bedeckt sein). Die Brezeln abtropfen lassen und zurück auf die Bleche legen. <p>Die Sonne lacht, der Grill glüht: im Sommer hat mein schnelles Baguette ganz ohne Kneten seinen großen Auftritt. Denn wenn wir mal ehrlich sind, machen die sommerlichen Grillsausen weniger wegen dem Grillgut an sich, sondern vielmehr wegen den ganzen leckeren Beilagen so viel Spaß! </p>

<p>Und dazu gehört in jedem Fall ein knuspriges Weißbrot, mit dem man die hungrige Wartezeit, bis das erste Grillgut gar ist, lecker überbrücken kann. Für mein schnelles Baguette-Rezept benötigt ihr gerade mal vier Zutaten und nur etwa 15 Minuten effektive Arbeitszeit. Den Rest erledigt die Hefe ganz alleine.</p>

<p>Der Teig muss nicht geknetet, sondern nur grob vermischt werden. Und er kann bis zu zwei Wochen im Kühlschrank gelagert werden, bevor ihr die Baguettes backt. Auf diese Weise kann das Rezept auch einfach verdoppelt oder vervielfacht werden. Dann könnt ihr es auf Vorrat im Kühlschrank lagern und einfach nach Bedarf backen.</p>

<p>Das Ergebnis sind herrlich knusprige Baguettes mit einer saftigen Krume. Wenn ihr kein spezielles Baguetteblech habt, könnt ihr die Brote auch einfach auf einer Lage Backpapier backen, das wie eine Ziehharmonika gefaltet wurde. Verrühren, bis sie sich aufgelöst hat und dann das Mehl und das Salz hinzugeben. Das Mehl mit einem Holzlöffel einarbeiten, bis sich alles gerade so zu einer einheitlichen Masse verbunden hat – kneten ist nicht notwendig!</span></div></li><li id="wprm-recipe-11712-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Den Teig abdecken und bei Zimmertemperatur 2 Stunden gehen lassen, dann über Nacht in den Kühlschrank stellen. (Der Teig kann auch direkt nach den 2 Stunden weiterverarbeitet werden, ist aber leichter zu handhaben, wenn er gekühlt ist. Er kann im Kühlschrank bis zu 2 Wochen gelagert werden).</span></div></li><li id="wprm-recipe-11712-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Am nächsten Morgen den Backofen auf 230°C Ober- und Unterhitze vorheizen und dabei ein Backblech im Ofen lassen. </span></div></li><li id="wprm-recipe-11712-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Den gekühlten Teig auf die gut bemehlte Arbeitsfläche geben und zu zwei langen Baguettes formen. Nochmals rundum mit Mehl bestäuben und auf ein Baguetteblech legen. Wer kein Baguetteblech hat, kann alternativ eine Lage Backpapier wie eine Ziehharmonika falten und dieses als &quot;Baguetteblech&quot; verwenden. Die Baguettes abgedeckt nochmals 20 Minuten gehen lassen.</span></div></li><li id="wprm-recipe-11712-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Die Baguettes mit einem scharfen Messer längs einschneiden und dann mit dem Backpapier auf das heiße Blech ziehen und auf der mittleren Schiene im vorgeheizten Ofen ca. 30-35 Minuten goldbraun backen. <p>[Dieser Beitrag erschien erstmals am 5. November 2017] Endlich ist es soweit! Mein heiß geliebtes Bananenbrot, das ich in fast wöchentlichem Rhythmus in den verschiedensten Variationen produziere, hat es auch auf den Blog geschafft. Bananenbrot geht einfach immer: zum Frühstück, als Snack zwischendurch oder nachmittags zum Kaffee (bzw. in meinem Fall Tee oder noch besser heiße Schokolade). Die benötigten Zutaten habe ich eigentlich immer im Haus und außerdem ist das Rezept die optimale Lösung, um braune, überreife Bananen zu verwerten. </p>

<p>Doch damit ist die Lobeshymne noch nicht vorbei: das Beste an dem Rezept ist nämlich, dass es wirklich in maximal zehn Minuten zusammengerührt ist und dann direkt in den Ofen kann. Einfacher und schneller geht&#8217;s nicht! Das kriegt man sogar noch am Feierabend nach einem langen Arbeitstag hin und kann sich am nächsten Morgen auf frisch gebackenes Bananenbrot freuen.&nbsp;</p>

<p>Diese Version enthält keinen Zucker(ersatz), kein Gluten und kaum Nüsse, sondern stattdessen viel Eiweiß und ist somit sehr gesund. Neudeutsch könnte man auch sagen: Low Carb, Paleo, Clean und der ganze Kladderadatsch. Quasi alles außer vegan. Durch die reifen Bananen hat das Brot trotzdem eine sehr angenehme Süße und wird durch die aufgeschlagenen Eier schön fluffig.</p>

<p>Ihr könnt dieses Rezept schier unendlich variieren und verfeinern, z.B. mit Erdnussbutter, Zartbitter-Schokolade, Beeren, etc, etc. Ich mische am liebsten ein paar Walnüsse oder geröstete Haselnüsse in den Teig und streue noch ein paar obendrauf für den extra Crunch.
