<p>In einem fluffigen Rührteig mit frischen Johannisbeeren versteckt sich ein flüssiger Kern aus angenehm säuerlichen Johannisbeercurd und getoppt wird das Ganze mit einer Haube aus luftig-leichtem Mandelbaiser.</p>

<p>Pur sind mir Johannisbeeren meist zu sauer, aber in Form von Kuchen nehme ich sie ausgesprochen gerne zu mir. Neben den roten, liebe ich bekanntlich vor allem die <a href="https://lacrema-patisserie.com/schoko-cassis-toertchen" target="_blank" aria-label="undefined (opens in a new tab)" rel="noreferrer noopener">Kombination aus schwarzen Johannisbeeren (Cassis) und dunkler Schokolade</a>, was euch vermutlich bekannt vorkommt, wenn ihr diesen Blog schon etwas länger verfolgt ;). </p>

<p>Aber zurück zur roten Johannisbeeren und zum Baiser: wenn euch das Curd zu aufwendig ist, könnt ihr den flüssigen Kern natürlich auch weglassen, wobei ich die zusätzliche Säure unter der Baiserhaube sehr lecker finde. Und noch dazu bekommt ihr einen tollen Wow-Effekt beim Anschneiden der Cupcakes, mit dem ihr auf der Kaffeetafel angeben könnt! </p>

Den Johannisbeersaft mit den Eigelben, dem Zucker und dem Saft einer Zitrone verrühren und bei niedriger Temperatur unter ständigem Rühren auf ca. 80°C erwärmen, bis der Curd eindickt. Zum Schluss die Butter unterrühren. Die Eier mit dem Zucker, der Milch und der Vanille schaumig schlagen. Das Mehl mit dem Backpulver und dem Salz vermischen und unterrühren. Die flüssige Butter dazugeben und kurz einrühren. Die Johannisbeeren waschen, von den Rispen zupfen und vorsichtig unterheben. Den Teig auf 12 Muffinförmchen verteilen und auf der mittleren Stufe im vorgeheizten Ofen 25-35 Minuten backen (Stäbchenprobe!). Den Baiser großzügig auf den gefüllten Muffins verteilen und mit Mandelblättchen bestreuen.
