<p>[Dieser Beitrag erschien erstmals am 4. September 2021] Endlich wieder Pflaumenkuchen! Ehrlich gesagt, bin ich noch so gar nicht in Herbststimmung. Schließlich hat der Sommer gefühlt noch nicht mal richtig angefangen&#8230; Einzig die Aussicht auf den durch die Wohnung ziehenden Duft von warmem Pflaumenkuchen und Zimtstreuseln tröstet mich über die Tatsache hinweg, dass die Abende nun schon wieder deutlich dunkler und kühler sind. Daher gibt es dieses Jahr den obligatorischen Pflaumenkuchen mal in neuer Form als Pflaumen-Streusel-Cupcakes mit Zwetschgenröster.</p>

<p>Und ich sage euch, diese Kombination aus fluffigem Teig mit Pflaumenstückchen, aromatischem Zwetschgenröster, feiner Vanillesahne und knusprigen Zimtstreuseln ist einfach himmlisch! Die Gefahr ist groß, dass man von diesen köstlichen kleinen Dingern gleich drei bis vier hintereinander essen muss. </p>

<p>Da ihr für diese Pflaumen-Streusel-Cupcakes nicht allzu viel braucht, sind die Mengenangaben für den Zwetschgenröster in diesem Rezept relativ klein. Ihr könnt sie aber auch einfach verdoppeln und den übrigen Röster anschließend im Kühlschrank aufbewahren (dort hält er sich locker einige Tage). Er schmeckt herrlich zu Milchreis, Pfannkuchen, Kaiserschmarren, Waffeln, Eis oder im morgendlichen Joghurt!</p>

<p>Falls ihr die Cupcakes backen, aber erst später servieren möchtet, empfehle ich euch, die Sahne erst kurz vor dem Servieren aufzuspritzen und dann die Streusel draufzugeben, damit sie schön knusprig bleiben. Ich wünsche euch ganz viel Spaß beim Nachbacken!</p>

Die Eier einzeln dazugeben und gut unterrühren. Das Mehl mit dem Backpulver vermischen und abwechselnd mit dem Eierlikör unter den Teig rühren. </span></div></li><li id="wprm-recipe-8319-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Die Pflaumen waschen, entkernen, in kleine Würfel schneiden und unter den Teig heben. </span></div></li><li id="wprm-recipe-8319-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Den Teig (am besten mit einem Eisportionierer) auf 12 Muffinförmchen verteilen (sie sollten etwa zu 2/3 gefüllt sein). Die Hälfte der Streusel auf den Muffins verteilen, die übrigen wieder in den Kühlschrank stellen. Die Pflaumen-Muffins auf der mittleren Stufe im vorgeheizten Backofen 30-35 Minuten goldbraun backen. Abkühlen lassen.</span></div></li><li id="wprm-recipe-8319-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Die Ofentemperatur auf 200°C erhöhen. Die übrigen Streusel auf einem mit Backpapier belegten Backblech verteilen und 10-15 Minuten goldbraun backen. Nach erfolgreichem Selbsttest, kann ich euch bestätigen: sie hält!</p>

<p>Allerdings vermutlich auch nur, weil ich die Erdbeeren vor dem Schokoladen-Tauchgang von unten mit einem Zahnstocher fixiert habe. Mit diesem kleinen Hilfsmittel funktioniert das Glasieren aber ohne Probleme und ich bin immer noch ganz entzückt, wie hübsch diese kleinen Dinger im Anschnitt aussehen.</p>

<p>Bei den Dickmännern hat mich schon als Kind immer diese labberige Waffel unten drunter gestört, die ich nach erfolgreichem Verzehr der Schaumcreme samt Schokoglasur meist unauffällig habe verschwinden lassen. Bei meinem Rezept habe ich daher die Waffel einfach durch einen Brownie-Muffin ersetzt, aber natürlich könnt ihr alternativ auch jedes andere Muffin-Rezept verwenden.</p>

<p>Damit sich die Cupcakes am Ende gut glasieren lassen ist es sehr wichtig, dass sie vorher lange genug im Kühlschrank gestanden haben, damit das Frostig fest wird, und dass die Glasur nur noch handwarm ist. Dann steht einem fröhlichen Tauchgang nichts mehr im Wege!</p>

Die Schüssel vom Herd nehmen und das Eiweiß mit der Küchenmaschine ca. 5 Minuten lang aufschlagen, bis eine standfeste, glänzende Masse entstanden ist. Das Frosting in einen Spritzbeutel mit beliebiger Tülle füllen.</span></div></li><li id="wprm-recipe-3485-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Die Muffins mit einem scharfen Messer etwas begradigen. Die Erdbeeren waschen und das Grün abschneiden. Je eine Erdbeere mit der Oberseite nach unten auf jeden Muffin setzen und mit einem Zahnstocher fixieren, der von unten durch den Muffin gestochen wird – so wird sichergestellt, dass die Erdbeere beim Glasieren der Cupcakes nicht herunterfällt.</span></div></li><li id="wprm-recipe-3485-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Das Marshmallow-Frosting kreisförmig rings um die Erdbeere aufspritzen, bis sie nicht mehr zu sehen ist. <p>Die ersten 30 Jahre meines Lebens habe ich verlebt, ohne einen einzigen Tropfen Kaffee zu mir zu nehmen. Und das sehr glücklich. Erst als ich beschlossen hatte, meine 80-seitige Masterarbeit innerhalb von vier Wochen runterzuschreiben (ja, ich war spät dran) und ich ohne irgendeine Form von wachmachendem Getränk nicht mehr aufrecht am Schreibtisch sitzen konnte, wurde ich notgedrungen zur Kaffeetrinkerin. Um in den drei Jahrzehnten davor nicht immer traurig daneben sitzen zu müssen, während meine Freund*innen einen dampfenden Cappuccino in den Händen wiegten, entdeckte ich meine Vorliebe für Chai Latte.  </p>

<p>Angelehnt an den südasiatischen Masala Chai, handelt es sich dabei um ein Getränk aus Schwarztee, Milch und einer bestimmten Gewürzmischung, etwa bestehend aus Zimt, Ingwer, Kardamom, Anis, Pfeffer, Nelken, Fenchelsaat, Koriander und Muskat. In Berlin bekommt man Chai Latte mittlerweile an jeder Straßenecke und in jeder erdenklichen Variante, von vegan bis laktosefrei. Und auch wenn ich mich inzwischen mit dem Kaffeetrinken angefreundet habe, trinke ich ihn noch immer gerne als koffeinfreie Alternative und habe schon seit Ewigkeiten vor, daraus ein Cupcake-Rezept zu entwickeln. Und heute, endlich, ist es soweit. Darf ich vorstellen: würzige Chai Cupcakes mit Apfel-Kürbis-Chutney und einem Frischkäsefrosting mit Dulce de Leche.</p>

<p>Als da wären ein fluffiger Gewürzteig mit Sahne, die nach Chai Latte-Art aromatisiert wird. Dieser wird gefüllt mit einem fruchtigen Apfel-Kürbis-Chutney, das den säuerlichen Gegenpol zum süßen Topping bildet. Dieses besteht aus einem luftigen Chai-Frischkäsefrosting mit Dulce de Leche (bei Letzterer handelt es sich um eine karamellisierte Milchcreme aus Lateinamerika, die sich ganz einfach zuhause nachmachen lässt). Ich sage euch, die Kombination ist ziemlich genial und eine perfekte kulinarische Verkörperung des Herbstes. </p>

<p>Chutney, Dulce de Leche und die aromatisierte Sahne können bzw. müssen schon am Vortag vorbereitet werden. Die Chai Cupcakes halten sich gekühlt locker einige Tage. Wer es lieber richtig süß mag, kann das Chutney natürlich auch weglassen und die Cupcakes stattdessen zusätzlich mit Dulce de Leche füllen. Ich wünsche euch ganz viel Spaß beim Nachbacken!</p>

Mit Wasser füllen, sodass die Dose vollständig bedeckt ist. Zum Kochen bringen und 2-3 Stunden bei niedriger Temperatur köcheln lassen. Abkühlen lassen und die Dose über Nacht in den Kühlschrank stellen.</span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Tag 2:</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-8525-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Den Backofen auf 175°C Ober- und Unterhitze vorheizen.</span></div></li><li id="wprm-recipe-8525-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Für den Teig die aromatisierte Sahne durch ein feines Sieb gießen und die Gewürze herausfiltern. Die Sahne mit dem Zucker in eine Schüssel geben und halb steif schlagen. Dann die Eier einzeln unterrühren. Mehl und Backpulver vermischen und unter den Teig rühren. Den Teig auf 10 Cupcake-Förmchen verteilen, sodass diese zu ⅔ gefüllt sind. Im vorgeheizten Backofen auf der mittleren Schiene 20 Minuten goldbraun backen. Abkühlen lassen.</span></div></li><li id="wprm-recipe-8525-step-1-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">In der Zwischenzeit das Chutney zubereiten. Dafür die Butter in einer Pfanne zerlassen und den braunen Zucker darin leicht karamellisieren. Die Kürbiswürfel hinzugeben und 5 Minuten bei mittlerer Temperatur braten. Dann die Apfelwürfel, Zitronenschale und -saft hinzugeben und weiter köcheln lassen, bis der Kürbis weich ist, aber noch Biss hat. Vom Herd nehmen und vollständig abkühlen lassen. </span></div></li><li id="wprm-recipe-8525-step-1-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Für das Frischkäsefrosting die Butter mit dem Puderzucker 10 Minuten lang auf höchster Stufe aufschlagen, bis sie weiß und luftig wird. Dabei immer wieder die Schüsselränder abkratzen und unterrühren. Dann den kompletten Frischkäse und das zerstoßene Chai Gewürz hinzugeben und 2-3 Sekunden auf höchster Stufe unterrühren (nicht länger, sonst wird der Frischkäse flüssig!). </span></div></li><li id="wprm-recipe-8525-step-1-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Die Dulce de Leche aus dem Kühlschrank nehmen und gut durchrühren. Eine Lage Frischhaltefolie auf die Arbeitsfläche legen und eine dicke Linie Dulce de Leche draufgeben. Links und rechts daneben das Frischkäsefrosting verteilen. Die Frischaltefolie von der Längsseite aufrollen und in einen Spritzbeutel mit Sterntülle legen.  </span></div></li><li id="wprm-recipe-8525-step-1-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Aus den abgekühlten Cupcakes mithilfe einer großen Lochtülle oder eines Apfelentkerners mittig ein Loch ausstechen. Das Loch mit dem Apfel-Kürbis-Chutney füllen. Das Frischkäsefrosting mit Dulce de Leche aufspritzen. Das übrige Chai Gewürz im Mörser zerstoßen und über die Cupcakes streuen. <p>In einem fluffigen Rührteig mit frischen Johannisbeeren versteckt sich ein flüssiger Kern aus angenehm säuerlichen Johannisbeercurd und getoppt wird das Ganze mit einer Haube aus luftig-leichtem Mandelbaiser.</p>

<p>Pur sind mir Johannisbeeren meist zu sauer, aber in Form von Kuchen nehme ich sie ausgesprochen gerne zu mir. Neben den roten, liebe ich bekanntlich vor allem die <a href="https://lacrema-patisserie.com/schoko-cassis-toertchen" target="_blank" aria-label="undefined (opens in a new tab)" rel="noreferrer noopener">Kombination aus schwarzen Johannisbeeren (Cassis) und dunkler Schokolade</a>, was euch vermutlich bekannt vorkommt, wenn ihr diesen Blog schon etwas länger verfolgt ;). </p>

<p>Aber zurück zur roten Johannisbeeren und zum Baiser: wenn euch das Curd zu aufwendig ist, könnt ihr den flüssigen Kern natürlich auch weglassen, wobei ich die zusätzliche Säure unter der Baiserhaube sehr lecker finde. Und noch dazu bekommt ihr einen tollen Wow-Effekt beim Anschneiden der Cupcakes, mit dem ihr auf der Kaffeetafel angeben könnt! </p>

Den Johannisbeersaft mit den Eigelben, dem Zucker und dem Saft einer Zitrone verrühren und bei niedriger Temperatur unter ständigem Rühren auf ca. 80°C erwärmen, bis der Curd eindickt. Zum Schluss die Butter unterrühren. Abkühlen lassen (kann auch einige Tage im Voraus zubereitet und im Kühlschrank aufbewahrt werden).</span></div></li><li id="wprm-recipe-6237-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Backofen auf 180°C Ober- und Unterhitze vorheizen.</span></div></li><li id="wprm-recipe-6237-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Für den Teig die Butter schmelzen und abkühlen lassen. Die Johannisbeeren waschen, von den Rispen zupfen und vorsichtig unterheben. Den Teig auf 12 Muffinförmchen verteilen und auf der mittleren Stufe im vorgeheizten Ofen 25-35 Minuten backen (Stäbchenprobe!). Abkühlen lassen.</span></div></li><li id="wprm-recipe-6237-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Aus den ausgekühlten Muffins mit einer Lochtülle jeweils ein Loch in der Mitte ausstechen und mit Johannisbeercurd füllen.</span></div></li><li id="wprm-recipe-6237-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Für die Baiserhaube die Eiweiße mit dem Zucker zu steifem Schnee schlagen. Den Baiser großzügig auf den gefüllten Muffins verteilen und mit Mandelblättchen bestreuen. <p>Eigentlich ist Ostern mein liebstes Fest im ganzen Jahr – ich liebe die Farben, den Frühlingsduft und all die Köstlichkeiten auf dem Brunchbuffet! Umso trauriger war ich, als sich immer deutlicher abzeichnete, dass es dieses Jahr wohl kein gemeinsames Osterfest wie sonst geben würde. Aber das heißt natürlich nicht, dass Ostern gleich ganz ausfallen muss! Man kann es sich schließlich auch alleine zu Hause lecker und gemütlich machen und dann per Videokonferenz mit seinen Liebsten brunchen.</p>

<p>Falls ihr noch unentschieden seid, was ihr für Ostern backen sollt, hätte ich hier eine feine Idee: wie wäre es mit ein paar saftigen Carrot Cupcakes, gekrönt von einem leckeren Osternest aus Frischkäse-Frosting und karamellisierten Walnüssen? Noch ein paar Schokoeier oder -hasen in die Mitte und fertig ist die Pandemie-Version der Ostertorte!</p>

<p>Durch die Karotten sind die Cupcakes super saftig und halten sich im Kühlschrank mehrere Tage. Wenn ihr also in einem kleinen Haushalt wohnt, könnt ihr sie beispielsweise schon Karfreitag backen und seid dann die ganzen Ostertage über mit köstlichen Cupcakes versorgt – Jackpot! Dann die abgeriebene Schale und den Saft der Orange unterrühren. Das Mehl, das Backpulver, die gemahlenen Mandeln und die Gewürze vermischen und ebenfalls unterrühren. Dann die Walnüsse grob hacken und zusammen mit den Karotten unterrühren. Zum Schluss das steife Eiweiß vorsichtig unterheben.  </span></div></li><li id="wprm-recipe-5883-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Den Teig gleichmäßig in 12 vorbereitete Cupcake-Formen füllen und auf der mittleren Schiene im vorgeheizten Ofen 25-35 Minuten backen, bis sie goldbraun sind (Stäbchenprobe!). Anschließend vollständig auskühlen lassen.</span></div></li><li id="wprm-recipe-5883-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Für die karamellisierten Walnüsse, das Wasser mit dem Zucker in einer Pfanne geben und auf mittlerer Stufe erhitzen, bis der Zucker beginnt zu karamellisieren. Dann die Walnüsse dazugeben, zügig vermischen und zum Abkühlen auf eine Lage Backpapier geben. Die abgekühlten Walnüsse grob hacken.</span></div></li><li id="wprm-recipe-5883-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Für das Frosting die weiche Butter mit dem Puderzucker einige Minuten lang aufschlagen, bis eine luftige, fast weiße Masse entstanden ist. Den kalten Frischkäse auf einmal dazugeben und 3 Sekunden (!) auf höchster Stufe unterrühren. Die Creme in einen Spritzbeutel mit Lochtülle füllen.</span></div></li><li id="wprm-recipe-5883-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Auf jeden Cupcake einen hohen Ring aus Frosting als &quot;Nest&quot; spritzen. Dann vorsichtig in den gehackten Walnüssen wälzen und mit Schokoeiern und -hasen dekorieren.
