<p>Irgendwie erinnert dieser Kuchen mich an die legendären (Apfel-)Pfannkuchen meiner Oma, was womöglich an seinem hohen Eigehalt liegt. Jedenfalls ein äußerst köstlichen Stück Gebäck mit den nötigen Seelenstreichler-Qualitäten für den Jahresanfang, an dem man sich ja nun erstmal wieder sortieren muss und überhaupt. Und dafür eignet sich so ein Stück französischer Apfelkuchen nebst einem Tässchen Tee ganz vorzüglich. </p>

<p>Obwohl ich mir nicht allzu viel aus Neujahrsvorsätzen mache, erschien mir der Verzehr eines kompletten Apfelkuchens durch meine Person allein doch etwas übertrieben, weswegen der Rest dann zur Freude meiner Kolleg/innen im Büro landete. Ja, mit mir zusammenzuarbeiten und eine Diät zu machen ist nicht leicht zu vereinen.</p>

<p>Nun ja, aber Äpfel sind ja schon mal drin und damit mindestens eine der täglichen 5 (oder wieviele waren es noch gleich?) angeblich empfehlenswerten Portionen Obst, die man täglich verzehren sollte. Gesundheitlich ist dieser Kuchen also quasi ratsam und seelisch sowieso.</p>

Das Eigelb mit der Milch verquirlen und zusammen mit Zucker und Salz hinzugeben. Alles rasch zu einer geschmeidigen Masse verkneten, zu einem flachen Rechteck formen und in Frischhaltefolie gewickelt mindestens 1 Stunde in den Kühlschrank legen.</span></div></li><li id="wprm-recipe-5413-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Den Backofen auf 170°C Ober- und Unterhitze vorheizen. Für die Füllung die Butter mit dem Zucker in einem Topf erhitzen. Eier und Sahne verquirlen, die Vanille und die geschmolzene Butter-Zucker-Mischung hinzugeben und unterrühren.</span></div></li><li id="wprm-recipe-5413-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Den gekühlten Teig gleichmäßig dünn ausrollen und eine gefettete Tarteform damit auskleiden. </span></div></li><li id="wprm-recipe-5413-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Die Äpfel schälen und in dünne Scheiben schneiden. Anschließend fächerförmig auf dem Tarteboden anorden und die vorbereitete Füllung darüber gießen. Die Tarte im vorgeheizten Backofen auf der mittleren Schiene 1 Stunde backen. Aus der Form lösen und auf einem Kuchengitter abkühlen lassen.</span></div></li><li id="wprm-recipe-5413-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">In der Zwischenzeit den Zucker mit dem Wasser einige Minuten zu einem Sirup einkochen und die Tarte damit bestreichen, damit sie einen schönen Glanz bekommt. <p>Inspiriert wurde diese Apfeltarte von einem meiner absoluten Lieblingsrezepte für <a href="https://lacrema-patisserie.com/der-weltbeste-apfelkuchen-oder-der-mit-dem-alles-begann" target="_blank" rel="nofollow noopener noreferrer">gedeckten Apfelkuchen</a>. Statt der Teigdecke kommen hier aber gehobelte Mandeln auf die Äpfel, die&nbsp;<em>vor</em> dem Backen mit einer Art Zuckerguss vermischt werden und dadurch beim Backen zu einer köstlichen Kruste karamellisieren.</p>

<p>Auf die Idee kam ich durch einen &#8222;Backunfall&#8220; meiner Mama, die den Kuchen aus Versehen vor dem Backen schon mit Zuckerguss bestrich. Das Ergebnis war so lecker, dass ich es gleich nochmal probieren musste.</p>

<p>Am besten schmeckt die Tarte noch lauwarm direkt aus dem Ofen. Ihr könnt sie beispielsweise auch mit Äpfel und Birnen backen oder mit irgendeiner anderen herbstlichen Frucht. Jetzt wünsche ich euch viel Spaß beim Nachbacken!</p>

Den Teig auf einer bemehlten Unterlage gleichmäßig dünn ausrollen und eine gefettete Tarteform damit einkleiden. Anschließend den Teig für mindestens 30 Minuten in den Kühlschrank stellen.</h4><ul class="wprm-recipe-instructions"></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Den Backofen auf 200°C Ober- und Unterhitze vorheizen. Die Äpfel schälen, halbieren und in Spalten schneiden. Mit dem Saft einer halben Zitrone vermischen, damit die Äpfel nicht braun werden. Nun den vorbereiteten Teigboden mit den Apfelspalten belegen. Den Zimt darüber streuen.</h4><ul class="wprm-recipe-instructions"></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Für den Mandelkaramell den Puderzucker mit 5 TL Zitronensaft verrühren und die Mandelblättchen untermischen. Gleichmäßig auf den Äpfeln verteilen.</h4><ul class="wprm-recipe-instructions"></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Die Tarte im vorgeheizten Backofen ca. 50 Minuten goldbraun backen.
