<p>Crumbles gehören zu den Rezepten, die man das ganze Jahr über backen kann – immer abgewandelt mit den jeweiligen Früchten der Saison. Ich backe sie am liebsten mit Äpfeln, Birnen, Pfirsichen, Kirschen, Beeren oder Rhabarber. Ein (Apfel) Crumble ist auch eine super Idee, wenn es einen spätabends spontan nach etwas Süßem gelüstet. Ich habe meistens eine Portion Streusel auf Vorrat eingefroren und schmeiße dann nur schnell alles zusammen in eine Backform und ab geht&#8217;s in den Ofen!</p>

<p>Für kleine Portionen eignet sich übrigens auch eine Heißluftfritteuse super zum Backen – dann geht es sogar noch schneller. Damit die Streusel schön knusprig werden, ist es wichtig, dass sie vor dem Backen nochmal richtig gut durchgekühlt werden. Ich verwende am liebsten säuerliche Backäpfel wie Boskoop für den Crumble, um die Süße der Streusel auszubalancieren. </p>

<p>[Dieser Beitrag erschien erstmals am 22. August 2020] Der August ist für mich eine der schönsten Zeiten des Jahres, denn dann hängt der Pfirsichbaum im Garten meiner Mama voller duftender Früchte, die darauf warten, gepflückt zu werden. Dieses Jahr konnte ich nicht widerstehen und musste aus der ersten Ernte einen herrlichen Pfirsich Streuselkuchen mit dicken Butterstreuseln und einem saftigen Zwillingsteig backen.</p>

<p>Denn warum sich zwischen Hefe- und Mürbeteig entscheiden, wenn man beides haben kann? Inspiriert zu dieser Fusion meiner beiden Lieblingsteige hat mich Annas Blog <a href="https://teigliebe.com/" target="_blank" rel="noreferrer noopener">Teigliebe</a>, auf dem sie schon mehrere Rezepte mit Zwillingsteig veröffentlicht hat. Ich hatte vorher noch nie davon gehört, aber zwei für sich köstliche Dinge können kombiniert ja nur noch köstlicher werden, oder?</p>

<p>Und tatsächlich ist es ganz simpel: beide Teige werden klassisch zubereitet und dann einfach miteinander verknetet. Das Ergebnis ist besonders saftig und feinporiger als ein normaler Hefeteig. Zusammen mit dem Aroma der frisch gepflückten Pfirsiche und jeder Menge dicker Butterstreusel ein wahrer Kuchentraum – am besten noch lauwarm direkt aus dem Ofen! </p>

<p>Wenn ihr nicht das Glück habt, einen eigenen Pfirsichbaum im Garten stehen zu haben, könnt ihr natürlich auch anderes Steinobst verwenden, zum Beispiel Pflaumen oder Aprikosen. Ich wünsche euch viel Spaß beim Nachbacken!</p>

Die Milch vorsichtig hinein gießen, die Hefe hinein bröckeln und zusammen mit dem Zucker verrühren, bis die Hefe sich aufgelöst hat. Mit etwas Mehl vom Rand bestäuben und den Vorteig 10 Minuten gehen lassen.</span></div></li><li id="wprm-recipe-6483-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Anschließend alle übrigen Zutaten bis auf die Butter hinzugeben und den Teig einige Minuten lang bei niedriger Geschwindigkeit zu einem geschmeidigen Teig verkneten, der sich von den Schüsselwänden löst. Die weiche Butter hinzugeben und einige Minuten lang weiter kneten, bis sich alles gut verbunden hat und ein glatter Teig entstanden ist. Die Schüssel mit einem sauberen Küchenhandtuch abdecken und den Teig 30 Minuten an einem warmen Ort gehen lassen.</span></div></li><li id="wprm-recipe-6483-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Für den Mürbeteig alle Zutaten zügig zu einem glatten Teig verkneten. Zu einer Kugel formen und in Frischhaltefolie gewickelt im Kühlschrank ruhen lassen, solange der Hefeteig geht.</span></div></li><li id="wprm-recipe-6483-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Für die Streusel alle Zutaten miteinder verkneten und mit den Händen zu groben Streuseln zerbröseln. Bis zur Weiterverarbeitung in den Kühlschrank stellen. </span></div></li><li id="wprm-recipe-6483-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Die Pfirsiche waschen, entsteinen und achteln. </span></div></li><li id="wprm-recipe-6483-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Die beiden Teige miteinander verkneten – es sollten noch Schlieren des Mürbeteig erkennbar sein. Den Teig gleichmäßig dünn ausrollen und auf ein mit Backpapier belegtes Backblech legen. Die Pfirsiche darauf verteilen. <p>[Dieser Beitrag erschien erstmals am 4. September 2021] Endlich wieder Pflaumenkuchen! Ehrlich gesagt, bin ich noch so gar nicht in Herbststimmung. Schließlich hat der Sommer gefühlt noch nicht mal richtig angefangen&#8230; Einzig die Aussicht auf den durch die Wohnung ziehenden Duft von warmem Pflaumenkuchen und Zimtstreuseln tröstet mich über die Tatsache hinweg, dass die Abende nun schon wieder deutlich dunkler und kühler sind. Daher gibt es dieses Jahr den obligatorischen Pflaumenkuchen mal in neuer Form als Pflaumen-Streusel-Cupcakes mit Zwetschgenröster.</p>

<p>Und ich sage euch, diese Kombination aus fluffigem Teig mit Pflaumenstückchen, aromatischem Zwetschgenröster, feiner Vanillesahne und knusprigen Zimtstreuseln ist einfach himmlisch! Die Gefahr ist groß, dass man von diesen köstlichen kleinen Dingern gleich drei bis vier hintereinander essen muss. </p>

<p>Da ihr für diese Pflaumen-Streusel-Cupcakes nicht allzu viel braucht, sind die Mengenangaben für den Zwetschgenröster in diesem Rezept relativ klein. Ihr könnt sie aber auch einfach verdoppeln und den übrigen Röster anschließend im Kühlschrank aufbewahren (dort hält er sich locker einige Tage). Er schmeckt herrlich zu Milchreis, Pfannkuchen, Kaiserschmarren, Waffeln, Eis oder im morgendlichen Joghurt!</p>

<p>Falls ihr die Cupcakes backen, aber erst später servieren möchtet, empfehle ich euch, die Sahne erst kurz vor dem Servieren aufzuspritzen und dann die Streusel draufzugeben, damit sie schön knusprig bleiben. Ich wünsche euch ganz viel Spaß beim Nachbacken!</p>

Die Hälfte der Streusel auf den Muffins verteilen, die übrigen wieder in den Kühlschrank stellen. Die Pflaumen-Muffins auf der mittleren Stufe im vorgeheizten Backofen 30-35 Minuten goldbraun backen. Abkühlen lassen.</span></div></li><li id="wprm-recipe-8319-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Die Ofentemperatur auf 200°C erhöhen. <p>Wie der Name Zwillingsteig schon nahelegt, besteht er aus zwei Teigen: Einem Hefe- und einem Mürbeteig, die miteinander verknetet werden, ohne dass sie sich dabei vollständig verbinden. Dadurch wird der Teig extra saftig und trocknet auch nach einigen Tagen nicht aus. Ich verwende für diese Art von Kuchen am liebsten Boskop-Äpfel, weil sie leicht säuerlich schmecken und ihre Konsistenz nach dem Backen die perfekte Balance zwischen weich und bissfest hat.</p>

<p>Da ein ganzes Blech Apfelkuchen vielleicht doch ein bisschen viel ist, um es auf einmal aufzuessen (außer ihr lebt in einer 8er-WG oder habt sehr viele Kinder), kann man den Kuchen übrigens auch hervorragend einfrieren. Ich lasse ihn dafür erst vollständig auskühlen, schneide ihn dann in Stücke und friere ihn ein, sodass ich mir je nach Bedarf ein Stück gönnen kann. Die einzelnen Stücke dann einfach aus dem Gefrierfach nehmen und bei Zimmertemperatur auftauen lassen – erneutes Aufbacken ist nicht nötig.</p>

<p>Ich gebe auf meine Streuselkuchen immer noch ein paar gehobelte Mandeln für den zusätzlichen Knuspereffekt, aber die könnt ihr natürlich auch weglassen. Der Kuchen schmeckt am allerbesten lauwarm aus dem Ofen mit etwas halbsteif geschlagener Sahne getoppt mit einer Prise Zimt. Ich wünsche euch ganz viel Spaß beim Nachbacken!</p>

Die weiche Butter hinzugeben und einige Minuten lang weiter kneten, bis sich alles gut verbunden hat und ein glatter Teig entstanden ist. Die Schüssel mit einem sauberen Küchenhandtuch abdecken und den Teig 30 Minuten an einem warmen Ort gehen lassen.</span></div></li><li id="wprm-recipe-9107-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Für den Mürbeteig alle Zutaten zügig zu einem glatten Teig verkneten. Den Teig gleichmäßig dünn ausrollen und auf ein mit Backpapier belegtes Backblech legen. <p>Praktischerweise bestehen Boden und Streusel aus demselben Teig, weswegen der Kuchen ruckzuck gemacht ist. Na gut, das Entkernen der Kirschen dauert zugegebenermaßen ein bisschen, aber dafür schmecken frische Kirschen einfach so viel besser! Wenn ihr euch die Arbeit partout sparen wollt, geht es natürlich auch anders ;). Ich würde euch aber empfehlen, gefrorene Sauerkirschen statt Kirschen aus dem Glas zu verwenden, weil diese deutlich besser schmecken.  </p>

<p>Als Ergänzung zu den Marzipanstreuseln habe ich noch etwas Tonkabohne in die Füllung gegeben. Da die Kirschen und der Saft an sich schon süß genug sind, kommt die Füllung ohne zusätzlichen Zucker aus. </p>

<p>Ich habe den Kuchen in einer recht kleinen Springform gebacken, sodass er relativ hoch wird. Ihr könnt natürlich auch eine größere Form verwenden und einen flacheren Kuchen backen oder aber das Rezept entsprechend <a href="https://lacrema-patisserie.com/umrechnungstabelle-fuer-torten" target="_blank" rel="noreferrer noopener">umrechnen</a>.
