<p>[Dieser Beitrag erschien erstmals am 13. Juni 2020] Gibt es eigentlich etwas Schöneres als diese Jahreszeit, in der sich die Wochenmarktstände unter den Bergen von frischen, regionalen Früchten und Beeren biegen? Vermutlich nicht. Ich jedenfalls liebe diese Zeit, in der man obsttechnisch aus dem Vollen schöpfen kann und beinahe jede Woche eine andere Saison beginnt. Diese Woche gibt es passend zum Beginn der Aprikosensaison eine saftige Aprikosen Tarte Tatin mit Rosmarin.</p>

<p>Klassischerweise kennt man die Tarte Tatin ja eigentlich mit Äpfeln, dabei eigenen sich auch jede Menge andere Früchte, vor allem Steinobst, als Belag. Das Besondere daran ist, dass die Tarte umgekehrt gebacken wird – also mit dem Boden nach oben. Das Obst liegt im Formboden auf einer Schicht Zucker, wodurch sich zusammen mit dem Fruchtsaft beim Backen ein herrlicher Karamell bildet.</p>

<p>Nach dem Backen wird die Tarte auf einen Teller gestürzt, sodass sie zum Servieren richtig herum liegt. Man sollte sie allerdings erst eine Weile auskühlen lassen, damit der Saft der Aprikosen nicht beim Stürzen herausläuft. </p>

<p>Wie sauer oder süß die Tarte Tatin wird, hängt von der Wahl der Aprikosen ab: je reifer sie sind, desto süßer wird natürlich auch die Tarte. Wer mag, reicht noch etwas halbsteif geschlagene Sahne dazu. Ich wünsche euch viel Spaß beim Nachbacken!</p>

Den Karamell in die eingettete Form gießen und gleichmäßig verteilen. Den Rosmarin waschen, die Blätter von den Stängeln zupfen und grob hacken. Den Rosmarin auf den Karamell streuen.</span></div></li><li id="wprm-recipe-6168-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Die Aprikosen waschen, entsteinen und halbieren. <p>Das Torten-Brainstorming ergab dann einen saftigen Marzipan-Orangen-Teig, der mit frischem Orangensaft und -likör getränkt und mit einer Rosmarin-Mascarpone-Creme gefüllt wird. Die Mischung ergibt eine fruchtig-herbe Torte mit einer feinen Rosmarin-Note – super lecker und mal etwas Abwechslung auf der Zunge!&nbsp;</p>

<p>Da es eine Waldtorte werden sollte, habe ich sie von außen in der semi-naked Optik belassen, was fast aussieht wie ein Birkenstamm, oder? Für die Deko habe ich Gummitiere von Schleich (noch eine Kindheitserinnerung!) und ein paar frische Rosmarin-Zweige verwendet.</p>

Für den Biskuit die Butter mit dem Zucker ca. 8 Minuten lang dickcremig aufschlagen. Das Marzipan mit einer Küchenreibe grob reiben und dazu geben (Tipp: das Marzipan vorher für 30 Minuten ins Gefrierfach legen, dann lässt es sich besser reiben). Die Eier einzeln dazu geben und gut unterrühren. Alle trockenen Zutaten mit der Orangenschale vermischen und abwechseln mit dem Orangensaft und -likör unter den Teig rühren. Den Teig in zwei mit Backpapier ausgelegte Springformen oder Tortenringe mit 18 cm Durchmesser füllen und auf der mittleren Schiene für ca. 50-60 Minuten backen (Stäbchenprobe!).  </h4><ul class="wprm-recipe-instructions"></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Die Böden vollständig auskühlen lassen und aus der Form lösen. Bis zur weiteren Verarbeitung beiseite stellen (können ebenfalls am Vortag gebacken werden).</h4><ul class="wprm-recipe-instructions"></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Für die Mascarponecreme den Mascarpone und den Frischkäse mit dem Puderzucker und dem Orangensaft verrühren. Die Rosmarin-Sahne steif schlagen und ebenfalls unterheben.</h4><ul class="wprm-recipe-instructions"></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Den Orangensaft mit dem Likör vermischen. Die vorbereiteten Böden jeweils einmal waagerecht in der Mitte durchschneiden. Den ersten Boden auf eine Tortenplatte legen und mit der Orangensaft-Likör-Mischung tränken. Gleichmäßig mit Mascarponecreme bestreichen und mit Orangenfilets belegen. Den zweiten Boden auflegen und so weiter verfahren, bis man beim letzten Boden angelangt ist. Die Torte rundherum mit der übrigen Mascarponecreme einstreichen und glatt ziehen. <p>Denn unter uns: Panna Cotta konnte ich noch nie widerstehen. Am liebsten würde ich das Zeug jedes Mal direkt aus dem Topf trinken, weil ich es nicht abwarten kann, bis die Panna Cotta fest geworden ist. Und ich sage euch, die Kombination mit dem Rosmarin ist einfach G-Ö-T-T-L-I-C-H. Geliertes Glück, wirklich wahr. </p>

<p>Und dabei ist Panna Cotta so ziemlich das simpelste Dessert, was man sich vorstellen kann: Sahne, Zucker, Rosmarin, Vanille und Gelatine in einem Topf aufkochen, fest werden lassen – und fertig! Die einfachsten Dinge sind eben meistens die besten. Der Trick bei dem Ganzen ist allerdings, die richtige Konsistenz zu treffen, sodass die Panna Cotta standfest, aber nicht zu fest ist und dabei wunderbar cremig bleibt. Dazu etwas fruchtigen Mangopüree und einen knusprigen Mürbeteig, et voilà, Frühlingsgefühle für die Geschmacksnerven. </p>

<p>Wenn ihr keine frische Mango bekommt, könnt ihr für die Fruchteinlage auch problemlos tiefgekühltes Fruchtfleisch verwenden. Wer mag, kann noch etwas Zucker dazu geben, weil die Gelatine die Fruchtsüße ein bisschen mindert. Ich persönlich finde aber, dass die Fruchtsäure sehr gut mit der süßen Panna Cotta harmoniert und verzichte daher in der Regel auf den Zuckerzusatz. </p>

<p>Die Tarte schmeckt natürlich auch mit anderen Fruchteinlagen super lecker – zum Beispiel mit Him- oder Waldbeeren. Bei der Variation sind der Phantasie wie immer keine Grenzen gesetzt.</p>

Den Teig gleichmäßig dünn ausrollen, die gefettete(n) Tarteform(en) damit auskleiden und den Teig für mindestens 2 Stunden – oder über Nacht – kühl stellen. </h4><ul class="wprm-recipe-instructions"></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Den Backofen auf 180°C Ober- und Unterhitze vorheizen. Den Tarteboden mit Backpapier belegen und ein paar Handvoll trockene Hülsenfrüchte (Reis o.Ä.) darauf geben, damit der Boden beim Backen nicht hochgeht. Den Boden nach Sicht blind backen, bis die Ränder goldbraun sind. Aus dem Backofen nehmen und vollständig auskühlen lassen.</h4><ul class="wprm-recipe-instructions"></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Für die Fruchteinlage die Gelatineblätter einzeln in kaltem Wasser einlegen. Die Mango pürieren und in einem Topf erhitzen (aber nicht kochen!). Den Topf vom Herd nehmen. Die Gelatine ausdrücken und in dem heißen Fruchtpüree auflösen und gut unterrühren. Den Püree auf Zimmertemperatur abkühlen lassen und anschließend gleichmäßig auf den Tarteböden verteilen. Kühl stellen.</h4><ul class="wprm-recipe-instructions"></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Für das Panna Cotta ebenfalls die Gelatineblätter einzeln in kaltem Wasser einlegen. Die Sahne mit dem Zucker, der Vanille und dem Rosmarin aufkochen und bei niedriger Hitze etwa 8 Minuten lang köcheln lassen (dabei öfter umrühren). Den Topf vom Herd nehmen und den Rosmarinzweig entfernen. Die Gelatine ausdrücken und in der heißen Sahne auflösen und unterrühren. Auf Zimmertemperatur abkühlen lassen und auf das inzwischen fest gewordene Mangopüree gießen.
