<p class="wp-block-paragraph">Schon mal was von Kolatschen gehört? Nein? Macht nichts, ich bis vor Kurzem auch nicht. Selbst mein Schreibprogramm ist misstrauisch angesichts dieses seltsamen Wortes und verwandelt die &#8222;Kolatschen&#8220; jedes Mal ungefragt in &#8222;Klatschen&#8220;. Mit Ohrfeigen hat das Ganze aber glücklicherweise nichts zu tun: Böhmische Kolatschen sind Hefetaler altslawischen Ursprungs, die mit einer Quark- und Mohnmasse sowie Pflaumenmus belegt werden. </p>

<p class="wp-block-paragraph">Obwohl mir der Name zunächst gar nichts sagte, als ich das Rezept in einem meiner Backbücher entdeckte, sind mir Kolatschen tatsächlich schon persönlich begegnet. Und zwar vor ziemlich genau zehn Jahren in Warschau. Damals war ich unterwegs auf einem längeren Trip durch Osteuropa und auf der Suche nach einem Frühstück to go in der Polnischen Hauptstadt. Nach kurzer Suche entdeckte ich in einer Seitenstraße ein unscheinbares Fenster, aus dem heraus ein köstlicher Duft wehte. </p>

<p class="wp-block-paragraph">Aus diesem versteckten Büdchen verkaufte eine Frau herrliche fluffige Hefetaler mit Belag – eben jene &#8222;Kolatschen&#8220;. Damals – passend zu den sommerlichen Temperaturen um die 30 Grad – belegt mit frischen Johannisbeeren. Dreimal dürft ihr raten, wo ich in den folgenden drei Tagen mein Frühstück gekauft habe&#8230;</p>

<p class="wp-block-paragraph">Und nun, gute zehn Jahre später, habe ich die Kolatschen wiederentdeckt – in einem Backbuch, das seit Ewigkeiten in meinem Bücherregal rumsteht. Diesmal gibt es sie passend zum Herbstbeginn in der Böhmischen Variante mit Quark- und Mohnbelag und Pflaumenmus (letzteres am liebsten selbstgemacht!). Wie alles mit Hefeteig schmecken sie am besten ganz frisch. </p>

Die Teigstücke zu Kugeln formen und dann so flach drücken, dass kleine Taler mit einem etwas breiteren Rand entstehen (wie eine Pizza).
