<p>Von dieser Pfannkuchentorte träume ich schon seit mindestens 25 Jahren. Ungefähr solange muss es her sein, dass ich sie zum ersten Mal in einem meiner liebsten schwedischen Kinderbücher, &#8222;Pettersson &amp; Findus: Eine Geburtstagstorte für die Katze&#8220;, entdeckt habe. Die Lektüre war so eindrucksvoll, dass ich mich noch heute an die genaue Handlung und sogar einzelne Sätze erinnern kann.</p>

<p>Der Alte Pettersson möchte seiner Katze Findus zum Geburtstag wie jedes Jahr eine Pfannkuchentorte backen und stellt dann fest, dass ihm die Hälfte der Zutaten und Materialien fehlt, bzw. nicht auffindbar ist (in erster Linie, weil er sie selbst verschlampt hat). Nach einigen Hindernissen kommt dann aber doch noch die berühmte Pfannkuchentorte auf den Tisch und die Geburtstagskatze ist glücklich. </p>

<p>Im Buch verziert Pettersson seine Pfannkuchentorte mit einer dicken Schicht aus weißem Zuckerguss (?), worauf ich bei meiner Torte aus Geschmacksgründen verzichtet habe. Und statt den Nüssen oder Schokotalern, die für Findus zum Einsatz kommen, habe ich frische Himbeeren und essbare Blüten aus dem Garten für die Deko verwendet.</p>

<p>Die Pfannkuchentorte ist wirklich super einfach zuzubereiten – im Grunde besteht sie nur aus Pfannkuchen, Himbeeren und Sahne – denn wie so oft, sind die einfachsten Dinge die allerbesten. Im Kühlschrank aufbewahrt schmeckt sie auch am zweiten oder dritten Tag noch und wird dann sogar noch schnittfester. Ich wünsche euch viel Spaß beim Nachbacken und beim Schwelgen in Kindheitserinnerungen!</p>

Das Mehl gut unterrühren, bis keine Klümpchen mehr vorhanden sind und den Teig 30 Minuten bei Zimmertemperatur ruhen lassen.</span></div></li><li id="wprm-recipe-6473-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Die flüssige Butter unterrühren und in einer gut beschichteten (!) Pfanne etwas Butter auslassen und jeweils eine Kelle Teig hineingeben. Den Teig durch Schwenken der Pfanne gleichmäßig verteilen und nach einigen Minuten wenden. Auf diese ca. 15 dünne Pfannkuchen ausbacken. Die fertigen Pfannkuchen vollständig auskühlen lassen.</span></div></li><li id="wprm-recipe-6473-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">In der Zwischenzeit die Sahne mit 2 EL Zucker und der Vanille steif schlagen. Die Himbeeren mit 4 EL Zucker (nach Geschmack) vermischen und mit einer Gabel grob zerdrücken.</span></div></li><li id="wprm-recipe-6473-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Zum Zusammensetzen einen Pfannkuchen auf eine Tortenplatte legen. 1-2 EL Sahne darauf geben und gleichmäßig verstreichen. 1 EL Himbeeren auf die Sahne geben und vorsichtig verteilen. Den nächsten Pfannkuchen darauf legen und so weiter stapeln, bis alle Pfannkuchen verbraucht sind.
