<p>Immer wenn es um Pudding geht, stellt sich die wichtige Frage: mit oder ohne Haut? Die Antwort spaltet die Gemüter und führt mitunter zu hitzigen Diskussionen. Ich beichte hiermit, dass ich absoluter Fan von Puddinghaut bin. Ich gehe sogar so weit, zu behaupten, dass die Haut das Beste am Pudding ist. So. Schreit mich in den Kommentaren nieder, wenn ihr anderer Meinung seid! </p>

<p>Aber zurück zum Schwarzwälder Kirsch Pudding. Ich habe Zartbitter-Schokolade verwendet, weil ich den herben, weniger süßen Geschmack bevorzuge. Ihr könnt natürlich auch Vollmilch-Schokolade verwenden, aber dann würde ich die Zuckermenge entsprechend reduzieren. Und hier noch mein Tipp, um den Pudding gut aus der Form zu bekommen: Silikonformen verwenden und den Pudding über Nacht einfrieren. So lässt er sich am nächsten Tag ganz einfach herauslösen. Vorausgesetzt natürlich, ihr könnt solange warten! </p>

Die restliche Milch mit dem Kakao und der Vanille verrühren und erhitzen. Sobald die Milch beginnt zu kochen, vom Herd nehmen und die Speisestärkemischung einrühren. Den Topf zurück auf den Herd stellen und unter ständigem Rühren erneut aufkochen lassen, bis der Pudding eindickt. Vom Herd nehmen und die klein gehackte Schokolade hinzugeben und unterrühren. Den Pudding in sechs Förmchen füllen (alternativ in Gläser gießen) und abkühlen lassen.</span></div></li><li id="wprm-recipe-16971-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Für die Kirschsauce die Kirschen mit dem Gelierzucker und der Tonkabohne in einem Topf vermischen und 30 Minuten stehen lassen, damit die Kirschen Saft ziehen. Anschließend aufkochen und unter Rühren fünf Minuten köcheln lassen. Den Schokopudding aus den Förmchen stürzen und die Mitte der Gugelhupfe mit der abgekühlten Kirschsauce füllen. <p>In drei Tagen ist Heiligabend und du hast noch keinen blassen Schimmer, was du zum Dessert servieren sollst? Dieser feine Mokka Flip ist im Nullkommanix zubereitet und bringt alles mit, was ein richtig leckeres Weihnachtsdessert ausmacht: Eine luftige Joghurtcreme mit dezenter Kaffeenote trifft auf fruchtige Sauerkirschen und knusprige Amarettini.</p>

<p>Ihr könnt das Dessert entweder direkt nach dem Zubereiten servieren oder ihr bewahrt es bis zum Servieren im Kühlschrank auf. Falls Kinder mitessen, könnt ihr den Kaffee in der Creme einfach weglassen. Ich mag den Mokka Flip am liebsten mit tiefgekühlten Sauerkirschen, weil sie weniger süß sind als Sauerkirschen aus dem Glas. Falls ihr keine bekommt, könnt ihr aber natürlich auch Schattenmorellen oder Ähnliches verwenden.</p>

<p>Wer ganz auf Alkohol verzichten möchte, kann ihn natürlich auch weglassen und stattdessen einfach Kirschsaft verwenden. Einige der Komponenten, wie die Kirschmarmelade, die Tartelettes oder die Schoko-Spiralen könnt ihr auch schon am Vortag vorbereiten und müsst dann am nächsten Tag nur noch alles zusammensetzen.</p>

<p>Vor dem Befüllen mit der Kirschmasse werden die Tartelette-Schalen noch mit flüssiger Kuvertüre eingestrichen und &#8222;versiegelt&#8220;, damit sie nicht aufweichen und schön knusprig bleiben. Falls gerade keine Kirschsaison sein sollte, empfehle ich euch, stattdessen tiefgefrorene (ungesüßte) Sauerkirschen zu verwenden. Die sind geschmacklich um Welten besser als die eingemachten aus dem Glas.</p>

<p>Die Schwarzwälder Kirschtörtchen halten sich gut 1-2 Tage im Kühlschrank, können also auch prima vorbereitet werden. In einen kleinen Topf geben, den Gelierzucker untermischen und die Masse unter Rühren einige Minuten sprudelnd aufkochen. <p>Ich persönlich bin ja nicht der allergrößte Schokofan und mag schokoladige Kuchen daher immer nur in Kombination mit einer zweiten Komponente, zum Beispiel Nüsse oder Früchte. Und das dunkle Schokolade und Kirschen ein absolutes Dreamteam sind, steht ja spätestens seit Erfindung der Schwarzälder-Kirschtorte fest. In dem Fall sind es aber Sauerkirschen, die das nötige säuerlich-fruchtige Gegengewicht zu den gehaltvollen Brownies bilden.</p>

<p>Die Kirschen werden mit etwas Aceto balsamico im Ofen geröstet, bevor sie in den Teig kommen, und erhalten so ein besonders spannendes Aroma, das perfekt mit der dunklen Schokolade harmoniert. Ihr könnt sowohl frische als auch tiefgefrorene (ungezuckerte) Sauerkirschen verwenden.</p>

Herausnehmen, abkühlen lassen und die Ofentemperatur auf 160°C herunterstellen. </span></div></li><li id="wprm-recipe-9797-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Für die Brownies die Butter schmelzen und abkühlen lassen. Währenddessen den Zucker mit den Eiern und dem Eigelb 5 Minuten lang hellcremig aufschlagen. Dann die Butter, das Öl und die Vanille auf niedriger Stufe unterrühren. Die trockenen Zutaten vermischen, über die Eimasse sieben und mit einem Teigschaber vorsichtig unterheben.</span></div></li><li id="wprm-recipe-9797-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Die Schokolade grob hacken und die Hälfte der Schokolade mit einem Drittel der Kirschen unter den Teig heben. Die Masse in eine mit Backpapier ausgelegte Backform à 24x18cm geben, glatt streichen und ein weiteres Drittel der Kirschen darauf verteilen. Die Brownies im vorgeheizten Backofen 40-50 Minuten backen, bis sie an der Oberfläche rissig werden.</span></div></li><li id="wprm-recipe-9797-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Aus dem Ofen nehmen und die restliche Schokolade darauf verteilen. <p>Nachdem es im letzten Monat mit meinem Grundrezept für cremiges <a href="https://lacrema-patisserie.com/eis-ohne-eismaschine" target="_blank" rel="noreferrer noopener">Eis ohne Eismaschine</a> und dem <a href="https://lacrema-patisserie.com/pina-colada-eis" target="_blank" rel="noreferrer noopener">Piña-Colada-Eis</a> schon zwei sehr simple Eisrezepte auf dem Blog gab, kommt diesen Monat eine etwas anspruchsvollere Variante für die Eismaschine. Inklusive selbst eingelegter Amarena Kirschen und frisch gebackener Eiswaffeln.</p>

<p>Am entspanntesten ist es, wenn ihr das Rezept über mehrere Tage verteilt zubereitet. Die Amarena Kirschen könnt ihr auch schon weit im Voraus vorbereiten, sie halten sich luftdicht verschlossen mehrere Jahre und werden immer leckerer, je länger sie durchziehen. Auch die Waffeln könnt ihr schon mehrere Tage vorher ausbacken – wichtig ist nur, dass sie danach luftdicht aufbewahrt werden, damit sie schön knusprig bleiben. </p>

<p>Wenn euch das Einkochen zu aufwendig ist, könnt ihr stattdessen natürlich auch frische Kirschen verwenden. Die werden im Gefrierfach allerdings ziemlich hart. Denn durch den Zucker und den Amaretto bleiben die Amarena Kirschen in den Schoko-Eis-Sandwiches auch nach dem Einfrieren schön weich und lassen sich so angenehmer essen. Die entsteinten Kirschen zusammen mit dem Zucker, dem Amaretto, dem Bittermandelaroma, der Vanille, dem Saft der Zitrone und der geriebenen Tonkabohne in eine ausreichend große Schüssel geben und gut vermischen. Abdecken und so über Nacht durchziehen lassen, damit die Kirschen Saft ziehen.</span></div></li><li id="wprm-recipe-11798-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Für das Schokoladen-Eis die Milch mit der Sahne in einem kleinen Topf zum Kochen bringen. Vom Herd nehmen. Die Schokolade im Wasserbad schmelzen und in die heiße Milch rühren. Die Eigelbe mit dem Zucker schaumig rühren und langsam in die Schokoladenmilch einarbeiten. Die Creme bei niedriger Hitze unter ständigem Rühren eindicken lassen (sie darf nicht kochen!). Dann die fertige Creme durch ein feines Sieb in ein geeignetes Gefäß füllen, direkt an der Oberfläche mit Frischhaltefolie abdecken und vollständig auskühlen lassen. Den Saft zum Kochen bringen und bei gelegentlichem Umrühren etwa bis auf die Hälfte einkochen lassen, bis er leicht eindickt. Den Gelierzucker hinzugeben und weitere 5 Minuten köcheln lassen. Die Kirschen in keimfreie Gläser schichten und mit dem heißen Sirup auffüllen. Fest verschließend und abkühlen lassen.</span></div></li><li id="wprm-recipe-11798-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Die Schoko-Creme in die Eismaschine füllen und 20-30 Minuten zu Eis weiterverarbeiten. Wenn die Masse etwa die Konsistenz von Softeis hat, die gehackte Schokolade und 150g der vorbereiteten Amarena Kirschen unterrühren.</span></div></li><li id="wprm-recipe-11798-step-1-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Die fertige Eismasse in eine Form von etwa 25x18cm füllen (sie sollte nicht zu groß sein, sonst werden die Eis-Sandwiches zu niedrig) und glatt streichen. Über Nacht ins Gefrierfach stellen.</span></div></li><li id="wprm-recipe-11798-step-1-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Für die Waffeln die flüssige Butter schaumig rühren, dabei nach und nach den Puderzucker und die Vanille hinzufügen. Dann nach und nach die Milch und das Mehl hinzufügen und alles zu einer glatten Masse verarbeiten. Den fertigen Teig 30 Minuten bei Zimmertemperatur ruhen lassen.</span></div></li><li id="wprm-recipe-11798-step-1-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Anschließend in einem heißem Eiserkucheneisen nacheinander kleine runde Waffeln mit einem Durchmesser von etwa 8cm ausbacken. Die restliche Eismasse aus der Form nehmen und in den Ausstecher pressen, um zwei weitere Kreise zu erhalten. Diese ebenfalls auf eine Waffel legen. Je eine zweite Waffel auf jeden Kreis legen und vorsichtig festdrücken.
