<p>Nach gut 15 Jahren Backerfahrung habe ich dann auch mal Cupcakes für mich entdeckt. Bis vor Kurzem noch war unser Beziehungsstatus eher schwierig bis nicht vorhanden, was vor allem daran lag, dass mir bei den meisten Cupcakes der Muffin zu trocken und das Topping zu fettig-süß ist. <p>Denn seit ich auf den Trichter gekommen bin, den Muffin mit einer fruchtig-säuerlichen Füllung zu pimpen und den Butter- und Zuckergehalt im Frosting zu reduzieren, bin ich quasi schockverliebt in Cupcakes. Unendliche Geschmacksvariationen und Dekomöglichkeiten tun sich auf! Und dann sehen sie noch so hübsch aus – wie ich finde eine sehr schöne Alternative zur klassischen Torte. Der Clou an dem Ganzen ist für mich, wenn man dem Muffin noch einen flüssigen Kern – beispielsweise aus Karamell oder einem Curd wie in diesem Rezept – verpasst, der erst beim Anschnitt sichtbar wird.</p>

<p>Aber zurück zum heutigen Thema: Es gibt Kokos-Passionsfrucht-Cupcakes mit besagtem flüssigen Kern aus fruchtigem Passionsfruchtcurd und einem luftigen Kokosfrosting. Passionsfrüchte gehören zu meinen liebsten Obstsorten und wer mich kennt, weiß, dass ich sie liebend gern beim Backen einsetze – auch wenn sie frisch hierzulande eher schwierig zu kriegen sind. Daher verwende ich gerne leicht gesüßtes Passionsfruchtpüree mit 90 Prozent Fruchtanteil, dass es gekühlt oder tiefgefroren in Großmärkten und speziellen Fachgeschäften wie Metro oder Frischeparadies zu kaufen gibt.</p>

<p>Für die Cupcakes habe ich das erste Mal Passionsfrüchte zu Curd verarbeitet und war ziemlich begeistert: der süß-saure Curd harmoniert sehr gut mit dem saftigen Kokosmuffin und der süßen Creme. Wer mag, kann die Kerne vor dem Verwenden heraussieben, aber mir gefällt der zusätzliche Crunch den die Kerne dem Ganzen geben, deswegen habe ich sie drin gelassen.</p>

Bei niedriger Hitze 5-6 Minuten köcheln lassen, bis sie zu einer dicken Paste eindickt. Mit Frischhaltefolie bedecken und bei Zimmertemperatur auskühlen lassen.</h4><ul class="wprm-recipe-instructions"></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Den Ofen auf 180°C Ober- und Unterhitze vorheizen. Für die Kokos-Muffins den Zucker mit der Butter schaumig schlagen. Das Ei und das Vanilleextrakt unterrühren. Mehl, Backpulver, Salz und Kokosstreusel vermischen und abwechselnd mit der Kokosmilch unterrühren. Nur so lange rühren, bis sich alles gut verbunden hat!</h4><ul class="wprm-recipe-instructions"></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Den Teig in die 6 vorbereiteten Muffinförmchen füllen und auf der mittleren Schiene im vorgeheizten Backofen ca. 20 Minuten goldbraun backen (Stäbchenprobe!). Die Muffins vollständig auskühlen lassen.</h4><ul class="wprm-recipe-instructions"></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Für die Buttercreme die Butter mit dem restlichen Zucker und einer Prise Salz ca. 5 Minuten lang luftig aufschlagen. Die vollständig abgekühlte Kokoscreme dazugeben und bei mittlerer Geschwindigkeit weitere 5-7 Minuten schlagen.</h4><ul class="wprm-recipe-instructions"></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Zur Fertigstellung mit eine Lochtülle Löcher aus den Muffins ausstechen und mit dem ausgekühlten Passionsfrucht Curd füllen. Die Kokosbuttercreme in einen Spritzbeutel mit beliebiger Tülle füllen und auf die Muffins jeweils einen Ring aus Buttercreme aufspritzen. Den Hohlraum in der Mitte mit weiterem Curd füllen und vorsichtig eine halbe Passionsfrucht in die Mitte setzen. Die Kokosraspel in einer Pfanne ohne Fett leicht anrösten. Abkühlen lassen und rundum in die Buttercreme drücken.</h4><ul class="wprm-recipe-instructions"></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Bis zum Verzehr im Kühlschrank aufbewahren.
