<p>[Dieser Beitrag erschien erstmals am 25.02.2017] Weniges weckt in mir solche Heimatgefühle, wie der Geschmack von frisch ausgebackenen Mutzen bzw. Mutzenmandeln. Die knusprige Hülle mit dem weichen Kern und die Kombination aus Rumaroma und Bittermandelöl ist für mich&nbsp;<em>die</em>&nbsp;kulinarische Kindheitserinnerung an Köln schlechthin. Und an Karneval natürlich.&nbsp;</p>

<p>Dieses Jahr bin ich zum ersten Mal seit meiner Auswanderung&nbsp;nach Berlin vor beinahe sechs Jahren wieder zur Karnevalszeit in meiner kölschen Heimat. Und beinahe hätte ich vergessen, in welchem Ausnahmezustand sich die Stadt zwischen Weiberfastnacht und Aschermittwoch befindet.&nbsp;Jegliche Infrastruktur jenseits der Straßenumzüge ist lahm gelegt, das Kölsch (= Kölner Bier) fließt in rauen Massen, Menschenmassen in bunten Kostümen bevölkern die Stadt und singen bis grölen dazu Lieder&nbsp;auf Kölsch (= Kölner Dialekt), wobei sich die Textsicherheit relativ zum steigendem Promillestand zu fortgeschrittener Stunde immer weiter festigt. &nbsp;</p>

<p>Hach ja, irgendwie habe ich es vermisst. Der Berliner an sich interessiert sich für Karneval ja ungefähr so viel wie für die letzte chinesische Rechtschreibreform.&nbsp;</p>

<p>Normalerweise mache ich um Frittiertes einen weiten Bogen – zumindest wenn es in meiner eigenen Küche entstehen soll. Und zwar nicht in erster Linie wegen der Hüftexpansionsgefahr, sondern vielmehr wegen dem hartnäckigen Geruch, der sich zwangsläufig in allen Textilien in Reichweite festsetzt. Aber einmal im Jahr darf auch bei mir etwas durch heißes Fett schwimmen: The one and only Mutzenmandeln! (Und wenn das Öl schon mal heiß ist, kann man direkt noch eine Ladung fluffiger Quarkbällchen hinterherschicken.)</p>

<p>Und bei sechs Tagen ausuferndem Biergenuss, Tanzen, Singen und Schunkeln braucht man schließlich etwas Solides für Zwischendurch, um bis Aschermittwoch durchzuhalten. Und: die&nbsp;Mutzen eignen sich natürlich auch perfekt als Mitbringsel für die nächste Karnevalsparty.&nbsp;</p>

Alternativ könnt ihr die Mutzen auch mit der Hand formen oder mit zwei Teelöffeln abstechen. </span></div></li><li id="wprm-recipe-4068-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">In einem Topf oder einer Fritteuse einen Liter Frittierfett auf etwa 175°C erhitzen (ihr könnt prüfen, ob das Öl schon heiß genug ist, indem ihr ein Holzstäbchen in den Öl hineinhaltet – wenn sich rundherum kleine Bläschen bilden, ist das Öl heiß genug und die Mutzenmandeln können hineingegeben werden). Die Mutzemandeln vorsichtig nacheinander in das heiße Öl legen (Achtung, Spritzgefahr!) und  4-6 Minuten lang von beiden Seiten goldbraun ausbacken. </span></div></li><li id="wprm-recipe-4068-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Die fertigen Mutzenmandeln mit einer Schöpfkelle aus dem Topf holen und auf mehreren Lagen Küchenpapier abtropfen lassen, um das überschüssige Öl aufzufangen.
