<p>Als Kind waren – wie vermutlich bei den meisten – Mama und Oma die Pfannkuchenbeauftragten meiner Wahl. Heutzutage backe ich sie mir meistens selber und habe beim Essen trotzdem noch immer das gleiche wohlige Gefühl von damals im Bauch. Wenn dann noch so hübsche Äpfel (wie in diesem Fall die Sorte &#8222;Kissabel Rouge&#8220;) dazukommen, werden die Pfannkuchen außerdem zu richtigen Hinguckern auf dem Frühstückstisch.</p>

<p>Die Apfel Pfannkuchen sind extra fluffig, kommen aber ohne Backpulver aus. Stattdessen habe ich frische Hefe verwendet (kann natürlich auch durch Trockenhefe ersetzt werden, wobei ich den Geschmack frischer Hefe im Teig liebe) und das Eiweiß für den Teig separat aufgeschlagen.</p>

<p>Das Rezept ergibt 10 kleine Pfannkuchen für je eine Apfelscheibe und reicht für 2-3 Personen (je nachdem, wie groß eure Pfannkuchengelüste sind ;)). Ich wünsche euch viel Spaß bei der Frühstückssause!</p>

<p>Durch die Kombination aus Sauerteig und Natron wird der Teig beim Ausbacken unglaublich fluffig und locker. Und das ganz ohne Backpulver! Ihr müsst die Sauerteigreste für die Pancakes nicht unbedingt aus einem gerade aufgefrischten <a href="https://lacrema-patisserie.com/sauerteig-zuechten?_gl=1*9lam36*_up*MQ..*_ga*MTE1MjczMjc0MC4xNzA0NDY5NTMw*_ga_Z1C97N01BT*MTcwNDQ2OTUzMC4xLjAuMTcwNDQ2OTUzMC42MC4wLjA." target="_blank" rel="noreferrer noopener">Ansatz</a> entnehmen, sondern könnt auch Reste aus dem Kühlschrank verwenden. Vor dem Ausbacken solltet ihr den fertigen Teig aber kurz ruhen lassen.</p>

<p>Und noch ein Tipp, den ich früher selbst oft falsch gemacht habe: Die fertigen Pancakes am besten nebeneinander auf einem Kuchengitter lagern und nicht heiß übereinander stapeln. So bildet sich keine Feuchtigkeit zwischen den Pancakes und sie werden nicht lasch. Am besten ist es aber natürlich, wenn sie nach dem Backen sofort serviert werden ohne ganz abzukühlen.</p>

<p>Ich war lange Zeit eine eiserne Verfechterin der klassischen Herzwaffeln aus Rührteig, wie man sie noch von Oma kennt. Aber diese Variante von unseren Belgischen Nachbar*innen mit extra flauschigem Hefeteig und Hagelzucker, der in den Teig eingebacken wird und an der Außenseite köstlich karamellisiert, ist mindestens genauso lecker. Normalerweise esse ich Waffeln eigentlich am liebsten, wenn sie schon einen Tag gelegen haben und etwas fest geworden sind. Da Belgische Waffeln aber mit Hefe gebacken werden, würde ich das in diesem Fall nicht empfehlen.</p>

<p>Sie schmecken am allerbesten ganz frisch gebacken und sollten noch am Tag des Backens gegessen werden (aber das sollte das kleinste Problem sein). Trotzdem könnt ihr den Teig schon bequem einige Stunden vor dem Backen vorbereiten und die portionierten Waffeln einfach im Kühlschrank aufbewahren, bevor sie ins heiße Eisen wandern. Statt Frischhefe könnt ihr auch Trockenhefe verwenden (die Menge dann auf 7 Gramm reduzieren), wobei ich den leichten Beigeschmack von frischer Hefe gerade in Belgischen Waffeln besonders köstlich finde.</p>

<p>Ich esse meine Waffeln am allerliebsten mit etwas Puderzucker bestäubt und dazu etwas halbsteif geschlagene Sahne und frische Erdbeeren. Aber auch Vanilleeis und heiße Kirschen passen natürlich ganz vorzüglich dazu. Ich wünsche euch ganz viel Spaß beim Nachbacken und vor allem: fröhliches Naschen!</p>

Den braunen Zucker, die Eier und das Mehl hinzugeben und 5 Minuten auf niedriger Stufe zu einem glatten Teig verkneten.</span></div></li><li id="wprm-recipe-9223-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Die zimmerwarme Butter hinzugeben und weitere 10 Minuten unterkneten, bis die Butter komplett eingearbeitet ist und sich der Teig von den Schüsselwänden löst. Den Teig abdecken und 90 Minuten an einem warmen Ort gehen lassen.</span></div></li><li id="wprm-recipe-9223-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Den Hagelzucker zum Teig geben und mit einem Spaten gut einarbeiten, sodass die im Teig enthaltene Luft entweicht. Jeweils eine etwa 100g schwere Portion vom Teig abnehmen und auf ein Stück Backpapier legen. <p>Ich habe mich lange gescheut, Crêpes zuhause selbst zu machen, da ich immer der Meinung war, ohne richtige Crêpepfanne würden sie sowieso nicht gut werden. Mit diesem Rezept bekommt ihr aber auch in einer ganz herkömmlichen Pfanne perfekte, hauchzarte Crêpes hin – Hauptsache, die Pfanne ist gut beschichtet! </p>

<p>Falls ihr die Mohn-Crêpes zum Frühstück servieren wollt, könnt ihr den Zwetschgenröster und die Marzipancreme auch schon am Vorabend vorbereiten. Sollte vom Röster etwas übrig bleiben, kann er auch problemlos einige Tage im Kühlschrank aufbewahrt werden und schmeckt herrlich zu Milchreis, Porridge, Waffeln, Eis oder im morgendlichen Müsli! </p>

Den Zucker in einer Pfanne karamellisieren. Mit Rotwein ablöschen. Portwein und den Saft ½ Orange sowie die Gewürze hinzugeben und köcheln lassen, bis sich der Zucker wieder aufgelöst hat. Die Zwetschgen hinzugeben und bei niedriger Temperatur sämig einköcheln lassen. Vom Herd nehmen, die Zimtstange entfernen und abkühlen lassen.</span></div></li><li id="wprm-recipe-8373-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Für die Marzipancreme Eigelbe, Zucker und Speisestärke verrühren. Die Vanille mit der Milch in einen Topf geben und aufkochen. Die heiße Milch unter ständigem Rühren zu der Eigelbmischung gießen und alles gut vermischen. Die Masse zurück in den Topf geben und bei mittlerer Temperatur unter ständigem Rühren erwärmen, bis die Masse eindickt. Die Creme in eine saubere Schüssel füllen und mit der Butter verrühren. Direkt an der Oberfläche mit Frischhaltefolie abdecken, damit sich keine Haut bildet und abkühlen lassen.</span></div></li><li id="wprm-recipe-8373-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Die Marzipanrohmasse in kleine Stücke schneiden und in eine Schüssel geben. Die abgekühlte Creme nach und nach unterrühren, bis eine glatte Konsistenz entsteht. Abdecken und beiseite stellen. </span></div></li><li id="wprm-recipe-8373-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Für die Crêpes alle Zutaten bis auf den Mohn zu einem glatten, klümpchenfreien Teig verrühren. Den Teig anschließend abgedeckt 1 Stunde ziehen lassen. Dann den Mohn hinzugeben, den Teig nochmals gut durchrühren und ggf. noch etwas Milch hinzugeben, falls der Teig zu zähflüssig sein sollte. </span></div></li><li id="wprm-recipe-8373-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Etwas Butter in einer beschichteten Pfanne auslassen und jeweils eine Kelle Teig in die Pfanne geben und bei mittlerer Temperatur dünne Crêpes ausbacken. Die fertigen Crêpes direkt abdecken, damit sie nicht austrocknen. <p>Kein Sommer ohne Waffeln! Wenn wir ehrlich sind, natürlich auch kein Herbst, Frühling oder Winter – aber die Kombination aus frisch gebackenen Sandwaffeln mit halbsteifer Schlagsahne und frischen Beeren ist für meine Geschmacksnerven jedes Jahr auf&#8217;s Neue das untrügliche Zeichen: jetzt ist Sommer! <p>Und natürlich müssen es die klassischen Herzwaffeln sein, die man schon als Kind geliebt hat und langsam, Herz für Herz, auseinander pflücken kann, um den Genuss maximal in die Länge zu ziehen. Vielleicht ist das auch der Grund, warum ich mir bis heute kein eigenes Waffeleisen zugelegt habe, sondern immer nur dann Waffeln backe, wenn ich in Köln bei meiner Mama bin. </p>

<p>Aber ich verrate euch ein Geheimnis: noch lieber als frisch aus dem Waffeleisen mag ich Waffeln eigentlich erst am Tag danach, wenn sie schon eine Weile lagen, etwas fest geworden sind (böse Zungen würden sagen &#8222;pappig&#8220;) und man sie noch vorm Frühstück im Schlafanzug vom Küchentisch naschen kann. Ein bisschen so, wie diese fertigen Waffeln aus der Packung – obwohl ich die auf den Tod nicht ausstehen kann. Seltsam, aber wahr. </p>

<p>Mein liebstes Grundrezept für einfache Sandwaffeln verzichtet auf überflüssigen Schnickschnack und bringt dafür alle Voraussetzungen mit, die eine gute Waffel erfüllen muss: außen knusprig, innen saftig, mit einem Hauch Zitrone und die perfekte Konsistenz am besagten nächsten Tag.
